ReefView Glasses filter out that blue cast, similar to how a photographer's lens filter works, so the colours you see sit closer to how the coral actually looks. Suitable for, and not suitable for
Suited to marine and reef aquariums running blue-spectrum LED lighting, where they help reveal coral colour and fluorescence normally washed out by the blue cast. They're not safety eyewear, and for camera work a dedicated lens filter is still the more accurate option.

Do these change how the coral actually looks, or just how it looks through the glasses?
Only how it looks through the glasses. They filter light on its way to your eyes and have no effect on the coral or the tank itself.
Will they work with any reef light, or only Red Sea lighting?
Any blue-heavy reef LED lighting, not just Red Sea fixtures. The effect is strongest under lights with a high proportion of blue and violet output.
Why is the pack 6 units instead of a single pair?

Are these only useful on saltwater tanks?
Yes. They're built around the blue-heavy lighting used on marine and reef aquariums and won't offer any benefit under standard freshwater lighting.
