Reverse osmosis and deionisation filters strip tap water back to pure water, removing chlorine, chloramine, nitrate, phosphate and dissolved minerals. In freshwater keeping that matters most for soft water species such as discus, wild caught tetras, apistogramma and many shrimp, where hard Australian tap water sits well outside their natural range.
Pure water is then remineralised to the hardness the species needs, which gives you control rather than being stuck with whatever the mains supply happens to be that week.
